If you live in Coquitlam and are obsessed with salt bread, this news will make you sing in joy.
Saltybear Bakery is opening its first storefront at 1161 The High Street in Coquitlam, in Kensington Plaza a couple of blocks from Coquitlam Centre.
The unit is the one Yi Fang left behind.
The bakery’s Instagram bio now reads opening this August, and a July 28 post showed the renovation underway inside the space.
The address and the August timing came out in the comments under that post rather than in the caption itself, which is roughly how this bakery has announced everything.
No exact opening day has been given yet.
The route here took sixteen months.
Saltybear started in April 2025 out of a commissary kitchen in the Metrotown area, selling by weekly Instagram preorder with pickup arranged around Burnaby.
Its first time selling to people face to face was December 2025, at Aberdeen Centre’s Christmas market.
After that came a run of pop-ups hosted inside other cafes, including Matcha Tea Lab and Peace and Culture, which drew lines and sold out.
That is the whole business model in three steps: commissary kitchen, pop-up, storefront.
Metro Vancouver has watched a lot of bakeries take that path in the last two years, and most of them never make the third step.
The product is salt bread, the Korean take on the Japanese Shio Pan that is a buttery, salted, croissant-adjacent roll that has been everywhere for a couple of years now.
Saltybear’s most popular salt breads are the sweet potato cream, garlic cream cheese, mentaiko, and milk cream.
Beyond the salt bread there are cream-filled buns and fruit sandos.
What the storefront actually changes is availability.
A preorder bakery can only sell what it bakes on a schedule, and every one of those pop-up sell-outs was a customer who showed up and left with nothing.
A permanent oven on The High Street means walk-ins, which is the part regulars have been asking for.
The strip it is landing on sits within walking distance of Coquitlam Centre and the Lincoln SkyTrain station, which is about as much foot traffic as the Tri-Cities offers a bakery.
Saltybear joins other upcoming Metro Vancouver food spots like Nami on Main Street, Chayan at Metrotown, and Hen in Mount Pleasant.
