Three friends cooked out of a solar-powered school bus for four years, sold it, and are opening their first retail location.
Burdy, the chicken parm sandwich operation that parked on the patio at Container Brewing, is rebuilding on Granville Island.
The new shop takes a corner unit inside the Chain and Forge building.
It will hold 14 seats and its own small patio, plus a share of the large patio the building’s seven food tenants will run between them.
The team announced the move on January 16 with a photo of the three of them standing under the Chain and Forge sign, and said they had been sitting on the news since the previous April.
Anthony, Max and Natalie worked the food truck together for four years, and all three are behind the new room.
The plan here is to be open seven days a week, lunch and dinner, with breakfast sandwiches added on weekends.
The chicken parm stays the anchor.
Breaded chicken, house basil mayo, parmesan and mozzarella, jammed into a soft potato bun, with a double stacked fried eggplant version for anyone skipping the meat.
The braised beef sandwich that used to rotate through the bus becomes permanent, and calzones are new, folded from slow-fermented pizza dough and baked in house.
Getting here took a strange route.
The original plan started off in ghost kitchens, and when those fell through in the spring of 2021 the team bought a bus instead, a bright yellow solar-powered thing they rebuilt themselves.
It opened at Container Brewing that June and stayed parked there for four years.
Then, on July 21 last year, they posted that the truck had to be sold and that the final service was that Saturday.
The bus went to Penticton.
The announcement said the timing was sudden because they had only just found out themselves, and the only hint at a future was a line promising something exciting they could not talk about yet.
Construction is now close to finished.
A red neon BURDY sign went up outside in early September, and the team says the interior started from a photo of floor tiles in the UK, which turned into warm wood, tile work and low lighting, with beer, wine and cider on the list.
What they still do not have is an opening date.
Earnest Ice Cream, which is opening their own Granville Island shop in the same new building, left a comment on that post welcoming the neighbours.
