Vancouver’s Chicken Parm Food Bus Crew Opens Its Granville Island Shop

The chicken parm crew that cooked out of a yellow food bus for four years just opened its Granville Island shop.

Burdy is now open at 1441 Anderson Street, a corner unit inside the Chain and Forge building, and its soft opening started on October 2.

Granville Island’s own account announced it as the chance to try what “many locals call ‘the best sandwich in Vancouver.'”

Getting here took a while.

Anthony, Max and Natalie started out planning ghost kitchens, and when that fell through in the spring of 2021, they bought a bright yellow solar-powered bus and rebuilt it themselves.

It parked on the patio at Container Brewing that June and stayed for four years.

In July 2025, the team posted that the truck had to be sold, with a final service on July 26, and the bus headed to Penticton.

The only hint about what came next was a line promising something exciting they couldn’t talk about yet.

That turned out to be this room, announced in January with a target of late spring.

It opened in October instead.

The chicken parm is still the anchor: breaded chicken, house basil mayo, parmesan and mozzarella on a soft potato bun.

The menu board in the opening photos lists an eggplant parm and a mushroom Swiss braised beef sandwich alongside it, plus margherita and pepperoni pockets and dirty fries.

Inside, there’s green tile, wood panelling and a red and cream checkered floor, with leather stools around a curved wooden counter built into a planter.

Big yellow tiles spell out BURDY down one wall, next to a rack of Burdy shirts and mugs.

The room holds 14 seats plus a small patio, and it shares a bigger patio with the other food tenants in the building.

For now, the opening runs until sold out, so earlier is the safer bet.

Burdy joins other recent Vancouver openings like Straight Outta Brooklyn on Kingsway, Mandy’s Gourmet Salads in Kitsilano and Läderach at Pacific Centre.
