Downtown Vancouver Gets New Lunchtime Burger Slider Counter

A new downtown slider shop is built around a single measurement: four bites per burger.

Four Bite Burger opened in late September in the Burrard Food Court at Bentall Centre, as the second concept from Jeremy Lau and Peter Yau, the owners of Bovine Rice Bowls.

One big catch: it is strictly a lunch operation, open weekdays from 11am to 3pm.

While most spots are trying to load up burgers, the pitch here is the opposite: a burger with less on it.

“In our city, you can get everything from an egg or avocado topping, to a micro green salad on your beef,” Lau and Yau say.

“There’s room for those things, but sometimes you just want a classic burger and we felt like there was a gap between fancy and basic.”

The menu stays narrow on purpose.

The beef blend is seasoned and cooked with thinly sliced onions, then topped with melted cheese and house sauce on a steamed potato roll.

Sliders come in packs of two, three or four, with seasoned curly fries alongside.

“We don’t want to do too much,” the owners say.

Beyond the beef, there are grilled cheese sliders, crispy chicken strips and a kale caesar salad, plus house-made iced tea and lemonade.

Chef Mario Regaldo leads it with more than two decades of experience, and Kristi Koike, formerly Bovine’s kitchen manager, runs the front of house.

Bovine is a counter-service rice bowl spot at 1050 West Pender Street, and it keeps the same weekday 11am to 3pm hours the burger counter is adopting.

Lau built that menu around rice bowls inspired by his travels in Japan, while Yau runs the front of house.

Lau has cooked in professional kitchens since 1997 and ran his first kitchen at 20, then spent seven years in product development for a food manufacturer before opening Bovine.

“The word on the streets is TRUE!” Bovine wrote on Instagram in September when it revealed the burger shop, and the post drew more than 240 likes.

Four Bite also completes the food court.

Hudson Pacific Properties, which owns Bentall Centre, announced five counters for the rebuilt Burrard Food Court in February: Four Bite Burger, Indish, Zab Bite Thai Express, and Tori and Little Seoul from the team behind The Frying Pan.

Zab Bite Express soft opened on September 9, which left the burger counter as the last of the five to open.

For office workers in the towers above, the lunch lineup on that one level now runs from ramen and Korean lunch boxes to Thai bowls, Indian comfort dishes and sliders.

Four Bite Burger joins Dante, Buttercrumbs and Zab Bite Thai Express as this year’s new arrivals in the Bentall Centre concourse.
