The Parker Place stall that said goodbye just weeks ago already has a successor.
Jing Noodle House, a new Wuhan-style noodle shop, has opened in the Richmond food court unit that Jiang Jiang left behind in July.
We stopped by anonymously on its second day of opening.
The menu revolves around dry and soup noodles.
Pick a base of Wuhan noodles, rice noodles, or plain rice, then a topping: mala beef, mala beef tripe, shredded beef, or braised beef.
Sides run from the toppings served on their own to fruit smoothies.
We went with the combo special, the signature Wuhan mala beef noodles with a drink included.
I’m usually a soup noodle person, but the staff suggested the dry signature, so we followed.
The noodles are the story here.
Staff shared that they run flatter than most, and the shape is deliberate: more surface for the mala sauce to cling to.
They were right about the cling, and the texture was the best part of the bowl, with a proper chew that held up under the sauce to the last bite.
We ordered medium spice, and even with weak spice tolerance it stayed comfortable, more hum than burn.
The heat built slowly through the bowl rather than hitting up front, which is exactly what let us survive medium.
The drink slot in the combo keeps it a one-stop food court lunch.
If you want soup instead, the same toppings drop into soup bowls, which is where we will aim on the next visit.
The meat portion is the part others will likely poke at, running on the lighter side for the price of a food court bowl.
We are not the only early opinions either.
Red Note reviewers who beat us to the stall this week have been calling the bowls authentic Wuhan style.
For Richmond, Jing deepens a very good year for noodle openings.
Between Chongqing bowls, hand-pulled lamian on the way, and now Wuhan style, the city’s noodle map keeps adding regions.
Jing Noodle House joins other recently opened Richmond spots like Chuan Noodle House, Pika Herb, and Pocorit Cafe.
