A shuttered Starbucks unit near Olympic Village Skytrain Station is about to get new life, and it is a local name taking over.
Pallet Coffee Roasters has been spotted with Coming Soon signage at the previous Starbucks location in the Olympic Village area, and a Noms Mag community member (elizabeththe) was the first to flag it last week.
Pallet Coffee confirmed to Noms Magazine that they are targeting an early June opening for the new spot.
This will be the chain’s 8th cafe, continuing a steady expansion that has made Pallet one of the most visible specialty coffee roaster chain in the city.
We previously covered Pallet’s downtown Vancouver opening, which marked their seventh location, and this latest move suggests the chain is not slowing down anytime soon.
The brand started back in 2014 as a roasting operation and has since grown into one of the more recognizable coffee names in the Vancouver market, with locations spread across different neighbourhoods.
Taking over a former Starbucks unit is a move that says something about how the coffee landscape in Vancouver is shifting.
The city has been seeing a lot of movement in the cafe space lately.
Noct Coffee and Octave Coffee both recently opened, each taking over previous Matchstick Coffee locations that had recently shuttered.
Trees Coffee has also been on the move, recently opening new spots in Surrey and along Kingsway.
No exact opening date beyond early June has been confirmed, but with the signage already up, things appear to be moving along.
Pallet Coffee Olympic Village joins a growing list of upcoming food spots in Vancouver including Truffle Donut on Kingsway, Mandy’s Gourmet Salads in Kits and Coal Harbour, and Field & Social South Flats.
