A North Shore French Bakery Is Quietly Opening on Vancouver’s Robson Street

A downtown corner that used to pour Waves Coffee is about to start smelling like fresh croissants instead.

Several Noms Magazine community members (chitieugenio and dinevancity) spotted new signage going up at the former Waves Coffee unit on the corner of Robson and Bute, and it points to Bisou Bakehouse moving in.

Bisou started back in 2006 as a 400 square foot shop in West Vancouver, opened by five friends, and has since grown across the North Shore and into the city.

The founders describe those early days as five close friends chasing one shared dream.

Its menu leans into classic French patisserie, with croissants, pain au chocolat, macarons, Danishes, cakes, and a cabinet full of cafe pastries.

The company also sends its baking well beyond its own counters, supplying Fairmont hotels and several international airlines.

This would give the bakery a second downtown address, joining its West End cafe on Bidwell Street.

Although they technically did have a second Downtown location already.

The brand opened a location inside Telus Garden on Georgia Street in late December 2023.

That shop lasted only about 11 months.

We reported in November 2024 that bailiffs posted a Notice of Seizure and Warrant ordering everything inside to be confiscated, citing an outstanding debt of $95,369.88.

When readers asked what had happened, Bisou said on Instagram that the closure came down to slow traffic.

So the Robson and Bute space reads as a second swing at downtown, this time on a retail strip rather than among the office towers around Georgia Street.

Robson is one of the city’s busiest shopping streets, which makes the foot-traffic question from the last location a very different bet this time.

Bisou has not announced an opening date for the Robson corner yet, and the space still looks mid-conversion.

Bisou Bakehouse Robson now joins a growing list of upcoming Vancouver food spots to watch, including Truffle Donut, Nana’s Green Tea Downtown, and Laderach at Pacific Centre.
