Granville Island has about five weeks left to eat plant-based pressed sushi before it moves away.
COFU announced on their Instagram that they’re ending their original shop at 1833 Anderson Street on September 28, five years after it opened.
Nothing about this is a failure and the team has been direct about that.
The pressed sushi is not disappearing, it is consolidating.
Starting October 1, the whole plant-based pressed sushi operation runs out of COFU Chinatown at 488 Gore Avenue, folded into an expanded menu alongside the counter dining that room already does.
Owner and chef Akiko opened the Anderson Street shop in 2021 and put something in front of Vancouver the city had not seen before, a plant-based take on oshizushi, the pressed and cut style rather than the rolled one.
The Chinatown room came later, in July 2025, built around a fully plant-based omakase with tasting and a la carte menus.
For a year the two have been running as separate arguments for the same idea.
Now there is one.
“We want our plant-based pressed sushi to continue growing with us,” the founder said of the move.
“Bringing it to Chinatown gives us the chance to elevate the menu, while introducing new options to our supporters and reaching new diners as well.”
The part worth watching is what happens to the Anderson Street room.
COFU is not giving it up.
The team says a new venture from the same crew is already in development for the space and is scheduled to launch later this fall, with details still to come.
So this is not a unit going completely dark and sitting empty through the winter.
COFU Granville Island joins a run of recent Vancouver closures including Unni Pastries on Robson, Kuro Katsu in the West End, and Fable Diner in Mount Pleasant.
