The pop-ups sold out often enough that regulars learned to set a reminder. That is no longer the system.
The popular Korean salt bread brand, Saltybear Bakery, has opened its first storefront at 1161 The High Street in Coquitlam, a couple of blocks from Coquitlam Centre.
Technically, they soft-opened back in mid-August, but shut the counter for a few days to tighten operations and implement learnings from the first week.

But they’re now officially back in action as of August 26th.
Saltybear started in April 2025 out of a commissary kitchen in the Metrotown area, selling via weekly Instagram preorders with pickup arranged around Burnaby.
Its first face-to-face selling was December 2025 at Aberdeen Centre’s Christmas market.
After that came pop-ups hosted inside other cafes, including Matcha Tea Lab and Peace and Culture, which drew lines and sold out.

Metro Vancouver has watched a lot of bakeries start that path in the last two years and stall on the third step.

The product is salt bread, the Korean version of the buttery, salted, croissant-adjacent roll that has been spreading through the region’s bakeries for a couple of years.
The most requested versions have been sweet potato cream, garlic cream cheese, mentaiko, and milk cream.
The Instagram grid has also carried mochi, red bean, matcha, butter, and a Dubai chocolate version, plus cream-filled buns and fruit sandos.
What the storefront changes is availability.
A preorder bakery can only sell what it committed to baking on a schedule, and every sold-out pop-up was a customer who showed up and left with nothing.
A permanent oven on The High Street means walk-ins, which is the thing regulars have been asking for since the Aberdeen market.
Saltybear joins other recently opened Metro Vancouver food spots including Chef Hyve on Commercial Drive, Dimsum Caddy in Richmond, and SUMU.
