One of Vancouver’s popular pop-up coffee roasters just signed a lease on its first permanent home.
Hiyori Coffee is opening a physical storefront in Mount Pleasant, taking over the former ITSUMO unit
The small-batch roastery first announced the news last month and followed up in February 2026 with an Instagram post confirming that the lease is official and building permits are now approved.
If you have been following Vancouver’s specialty coffee scene over the past couple of years, you probably already know Hiyori.
Co-founded by Shinya and Eri, a husband-and-wife team originally from Japan, the roastery launched in May 2024 and built a following through a steady rotation of pop-ups around the city.
Both founders bring deep experience in the coffee industry, and their approach leans heavily on precision and sourcing.
Hiyori focuses on specialty micro-lot beans, carefully selecting small quantities that stand out in the cup.

The variety changes frequently because of those limited batch sizes, which keeps the offering fresh for regulars.
The name Hiyori (日和) translates to fine weather, favourable conditions, or harmony in Japanese.
It is meant to capture the feeling of enjoying a quiet, relaxing moment with a well-made cup of coffee, rain or shine.
But the real headline here is the AeroPress connection.
Shinya is a Canadian AeroPress champion, taking 1st place at both the Nationals and the Calgary Regional in 2023, and finishing 3rd at the 2025 Nationals.
At their pop-ups, every drink has been brewed exclusively with the AeroPress, which the team calls their foundation and favourite brewing method.
It is not yet clear whether the permanent shop will stick to AeroPress-only service or expand the brewing lineup.
Their new space previously housed Enishi Space, the multipurpose event venue operated by neighbouring Japanese lifestyle shop ITSUMO.
ITSUMO recently shifted next door, opening up the storefront for Hiyori to move in.
In a more recent Instagram post, the team shared a photo of the empty interior with the caption: “This is where Hiyori Coffee will begin. It’s empty now, and that’s exactly how it should be. Before machines, before counters, before opening, there is space to imagine what coffee can be.”
There is no confirmed opening date yet.
In the meantime, their beans are available to order online through the Hiyori Coffee website.
Hiyori Coffee now joins the growing list of upcoming food spots in Vancouver like Aura, TURF Main, and Vansuya.
