The culinary landscape of Vancouver is about to lose a standout gem.

Black Walnut, a chef-driven, locally owned restaurant nestled in the heart of Cambie Village, has announced its closure after less than a year of opening.

Opening its doors in mid-August 2023, Black Walnut was well-reviewed (4.5 stars with over 200 reviews) for its innovative approach to dining.

The restaurant was known for its steak and specialty dry-aged fish, a unique offering that showcased the best in-season local ingredients.

The dry-aging process, a rarity in many kitchens, involved using a machine to expertly extract excess moisture from the fish.

This process not only intensified the umami flavours and increased the fat content but also transformed the texture into a firmer yet tender consistency.

The result was a crispy-skinned, flavour-packed fish that left diners craving more.

On July 24th, Black Walnut announced its imminent closure on their official Instagram account.

“Hello Everyone… just to let you know @blackwalnutcambie will close the doors permanently July 28th. We want to thank everyone who came out to support! Come on by before Sunday. Would love to see some of your beautiful faces before we ride off into the sunset,” the post read.

Even in less than 24 hours, many customers and food industry professionals have shared their sadness and support for Chef Josh Gonneau.
