A New Hotel Restaurant With Huge Downtown Views Just Soft Opened

Hotel restaurants do not usually get a second look from locals. This one is making a case for it, starting with the windows.

Cloudstreet has soft opened inside the Hyatt Regency Vancouver at 655 Burrard Street, with a dramatically redesigned dining room wrapped in floor-to-ceiling windows over downtown.

The team calls it one of the most expansive dining views in the city, looking out over the corner of Burrard and Georgia.

The soft opening runs ahead of a full grand opening set for September.

The pitch is a lighter, more seasonal take on hotel dining, rooted in the Pacific Northwest and built around local producers.

The room is open daily for breakfast, lunch, and dinner, with a layout meant to carry from morning meetings through to evening cocktails.

The kitchen is the part worth paying attention to.

The Hyatt Regency culinary team is led by executive chef Daniel Chiang, with the day-to-day at Cloudstreet run by chef de cuisine Craig Sung.

Sung is a Red Seal chef who most recently ran the kitchen at Forage, the West End locavore favourite at the Listel Hotel, where he built a reputation for sustainable, locally focused cooking from 2019 onward.

He brings that same hyper-local focus to his opening menu here, called Summer Terroir.

“This menu is inspired by the wild beauty and quiet richness of the Pacific Northwest and is a celebration of the summer season at its peak,” Sung said.

He describes working closely with local producers and growers, with every ingredient sourced for a menu he calls refined, effortless, fresh, and layered.

The view is the obvious draw, which makes it a natural pick for a meal that needs an occasion, especially a window table at dinner when the downtown lights do the decorating.

The bar rounds it out with signature cocktails, a set of zero-proof drinks, craft beer, and a wine list that leans on British Columbia wineries alongside international labels.

For a hotel dining room that used to run on autopilot, bringing in a Forage alum and building a menu around BC producers is a real swing.

Cloudstreet joins other recently opened Vancouver food spots like Ramen Danbo on Main Street, Menya Tsuzuki at Robson Public Market, and Buttercrumbs at Bentall Centre.
