If you live in the Coquitlam area and are looking for a tasty and healthy snack, this new Korean cafe may be worth adding to your “noms list”!
Illo Kimbap Cafe is the newest addition to Coquitlam, which offers traditional Korean kimbap and sandwiches with a modern health-conscious twist.
The spot is located in the same plaza as Katsuya and Pho Super Bowl across from Burquitlam station and around multiple high-rise condos.
At the heart of Illo’s menu is a dedication to healthy eating, inspired by owner Bona Kwon’s personal family experiences.
“When I was a child, my grandmother’s 30-year diabetes management was always at the center of our family. And now my husband is diabetic,” Bona shares with Noms Magazine.
This personal journey sparked the creation of Illo, aiming to offer nutritious yet delicious meals that cater to everyone, including those with dietary restrictions like diabetes.
I felt a responsibility to deeply learn about healthy diets and nutrition, and to take care of my family more healthily.
Bona Kwon, owner of Illo
So what sets Illo apart?
It’s not just any kimbap cafe.
“We adhere to traditional methods while adapting to modern health trends by incorporating organic brown rice, glutinous black rice, barley, quinoa, along with fresh vegetables and fruits, to achieve the perfect balance of health and taste,” explains Bona.
Each roll and sandwich at Illo includes more vegetables and special ingredients than conventional options, ensuring every bite is packed with both flavour and nutrients.
Illo’s signature kimbap, the “ChiChi”, is made with tuna mayo, burdock, carrot, fermented homemade kimchi, and brown rice with 5 mixed grains.
It’s a must-try for anyone curious about a lighter, fresher take on Korean food.
The commitment to health extends to their sandwich line, using whole grain bread and minimal sugar.
Step inside Illo and you’re greeted by a cozy cheerful, café-like ambiance with pops of bright yellow.
Although Illo operates as a takeout spot, a couple of high chairs are available for customers to enjoy a quick, healthy meal.
For first-timers, Bona hopes to shift perceptions of Korean cuisine from being overly salty and calorie-dense to something you can enjoy guilt-free.
“The most important thing is to try it and make it a place you want to introduce to your friends,” she adds.
If you’re looking for a unique culinary experience that caters to the health-conscious, Illo is your go-to spot.
