Whistler’s food scene is about to level up as Lorette Brasserie prepares to open its doors in early spring.
Located in the heart of the North Village, Lorette will take over the space previously occupied by Elements Urban Tapas Parlour in the Summit Lodge Boutique Hotel by Paradox.
Brought to life by the Paré Restaurant Group—the folks behind Whistler favorites Quattro and Caramba—Lorette promises to bring the best of French brasseries with a Québécois twist.
The 90-seat eatery is a true family affair, co-owned by Jay Paré and his nephew, renowned chef James Paré, and lovingly named after their shared family matriarchs.
James, a culinary globetrotter, started his career at The Fairmont Chateau Whistler before making waves at the Fairmont Olympic in Seattle and the iconic Savoy in London.
Meanwhile, Jay’s hospitality journey spans decades, with leadership stints at Whistler staples like Umberto’s and Quattro.
Together, they’ve proven their magic with Caramba and Quattro, setting the stage for Lorette to shine.
The menu?
Think French classics with a Pacific Northwest flair.
Highlights include Onion Tarte Tatin with foie gras torchon and Oka cheese, Lobster Vol au Vent dressed up with sweetbreads and truffles, Beef Cheek Bourguignon, Duck Confit, and Wagyu Hanger Steak au Poivre.

The space channels classic brasserie vibes with a modern touch.
Picture mosaic tiles, warm natural wood, bistro curtains, gold window lettering, and custom lighting that wraps the whole place in a cozy, come-as-you-are glow.
While the official opening is still a few months away, eager foodies can get a sneak peek at Lorette’s breakfast and brunch menu at Caramba daily from 9 a.m. to noon.
