Vancouver’s sushi scene has a new star as Sushi Hyun, a reservation-only omakase restaurant, has officially opened its doors in the West End.
After months of anticipation, this intimate 6-seater spot—operated by Chef Juhyun Lee—is ready to offer diners a meticulously crafted sushi and kaiseki experience.
Chef Juhyun, whose journey into Japanese cuisine began during his time as an international student, has brought his culinary expertise from years of training in Korea, Japan, and Michelin 2-star establishments to Vancouver.
His mission?
To share the “brightness” (as the name “Hyun” translates) and create memorable dining moments for each guest.
Sushi Hyun offers two distinct omakase experiences:
- Lunch Omakase: Priced at $200, this 15+ course experience focuses on sushi courses, delivering an immersive yet brief dining adventure lasting around one hour.
- Dinner Omakase: For a more elaborate affair, the $300 dinner omakase includes 20+ courses, featuring a mix of sushi and seasonal dishes paired with sake, wine, and champagne.
The restaurant’s design reflects the authenticity and dedication Chef Juhyun aims to bring to every detail of the omakase experience.
From the Hinoki wood counters—imported from Japan and aged over 200 years—to the carefully sourced seafood from Tokyo’s Toyosu Fish Market, everything is crafted to provide a true taste of Japan without leaving Vancouver.
Sushi Hyun officially opened in mid-August, and while the restaurant currently seats six for dinner, there are plans to expand to eight seats once operations are running smoothly.
Vancouver has definitely been adding more high-end spots for sushi lovers and omakase enthusiasts in the last few years.
