Back in July we spotted signs of a mysterious new bubble waffle shop setting up in Richmond.
Now the wait is over, as Egg Lab has quietly soft opened at Empire Centre Plaza.
Taking over the former Fast Go Express unit, Egg Lab shows off a playful brand with a professor-style egg mascot and the promise of โmany flavours, freshly made.โ
The first option is a build-your-own bubble waffle, where you pick a shell flavour like original, matcha, chocolate, earl grey, or black sesame.
Then choose from fillings such as red bean, mochi, chocolate chips, black pearl, pork floss with seaweed, or even a Portuguese egg tart for a premium upgrade.
Itโs a mix-and-match style approach that lets you customize your waffle however you like – something you don’t quite see too often.
Alongside that, Egg Lab also has a menu of preset favourites, including pork floss seaweed, chocolate with chip filling, matcha with red bean, and earl grey with black pearl.
We got the Portuguese egg tart filling bubble waffle during our visit (anonymously as usual), and while it came with a decent amount of filling, the overall flavour was decent.
To pair with the waffles, Egg Lab offers a drink menu that covers Hong Kongโstyle classics like Ceylon milk tea and lemon tea, plus jasmine milk tea and sparkling fruit sodas in peach, and kumquat lemon.
During soft opening, theyโre running a deal where any bubble waffle purchase gets you 15% off drinks.
Empire Centre has been seeing a wave of changes recently.
Its food court is now buzzing with activity, and the plaza itself has welcomed newcomers like Fruitbox and Chahalo.
Egg Lab is the latest addition, contributing to the ongoing revitalization of the mall.
Egg Lab now joins other recently opened food spots in Richmond including Hong Phat, Ng Kee Cafรฉ, and LUCA.
