Vancouverโs Mount Pleasant is about to welcome a new Italian gem this Fall.
Giusti, a fresh addition to the cityโs dining scene, is set to open the week of October 20th, inside the historic building that once housed Bar Susu and The Whip.
The restaurant promises to celebrate Italyโs rich regional diversity through handmade pasta, seasonal vegetables, and classic aperitivi, all led by acclaimed chef Mark Perrier.
The restaurantโs name pays homage to co-founder Carla Giustiโs Italian roots and her late father, Romano Giusti.
She joins forces with hospitality veterans Cam Watt (The Keefer Bar, Acre and June) and Miguel Quezada (Savio Volpe, Oddfish, and Elio Volpe).
Together, the trio is building something that feels like a true neighbourhood fixture rather than a special-occasion destination.
โI wanted to create a restaurant that would honour my father,โ says Carla. โI grew up in a home where no excuse was needed to fill the table with food, family, and friends.โ
Chef Perrier, best known for his time at Savio Volpe and Osteria Savio, brings a philosophy rooted in restraint and respect for ingredients.
The menu will showcase Italyโs regional traditions with an emphasis on simplicity, freshness, and flavour.
Guests can expect pasta made fresh in-house daily, including lesser-seen shapes, alongside a series of vegetable-forward antipasti known as โverdure di stagione.โ
โIn Italian cooking, itโs all about flavour and letting the ingredients speak for themselves,โ Chef Perrier explains.
โYou donโt need a lot on the plate, just the best ingredients, minimally altered.โ
The beverage menu will blend aperitivi-style cocktails and Italian wines with selections from Burgundy, Champagne, and local B.C. producers.
The 2,400 sq.ft space is being refreshed, maintaining the buildingโs original charm while bringing in soft, contemporary touches.
Giusti will open seven days a week from 5 p.m. to 10 p.m., with a soft opening taking place a few days before the official launch.
They will now join other upcoming Vancouver food spots like Chaiiwala West End, C Market Coffee Main Street, and Ongiri Ya Downtown.
