Chinatown’s food scene is getting a fresh, plant-based twist!

COFU is officially taking over the long-empty corner unit at Gore Street, previously home to Kevin & Kevin Juice.

If you’ve been wondering when that space would finally see some action, the wait is over!

COFU, the plant-based sushi shop, made the big announcement on Instagram on February 18, sharing their expansion into Chinatown.

The brand first launched in 2021 near Granville Island, specializing in pressed sushi—the oldest form of sushi dating back over 1,000 years.

What sets COFU apart?

First – they swap the traditional white rice for a more nutrient-rich black rice.

And instead of soy sauce, they offer an array of eight different house-made vegetable dipping sauces.

Their sushi isn’t just visually stunning—it’s healthier, low in calories, high in fiber, and packed with flavour.

COFU is the brainchild of Akiko, a single mother and new immigrant to Canada, who turned her dream into reality by crafting vegan sushi that goes beyond the basic cucumber roll.

Their unique approach includes jackfruit-based tuna, carrot and konjac salmon, and umami-rich macrobiotic flavours, inspired by traditional Japanese Buddhist cuisine.

Even the aesthetic of their sushi is influenced by bakery and cake shop scene—making each piece as beautiful and colourful as it is delicious!

But COFU isn’t just about sushi and party trays—it’s also Canada’s first plant-based sushi and sober bar.

Their Chinatown location will be a great for vegans, health-conscious foodies, and anyone looking for a fresh take on Japanese cuisine.

COFU will now join the wave of exciting new spots coming soon to Downtown Vancouver this year.
