It wasn’t long ago that we shared the sad news about Ramen Kounotori shutting down on Main Street.
The unit has seen its fair share of turnover over the years, leading many locals to wonder who would be brave enough to take over the space next.
Well, we didn’t have to wait long.
We spotted that new bright orange signage has already appeared on the windows with the slogan “SUNSHINE IS COMING!”, confirming that a rapidly growing breakfast brand called Eggstatic is moving in.
While the name might be new to Vancouverites, Eggstatic is a serious player in Eastern Canada.
Founded in 2018 by Chef Faris Awwad, the brand has grown to 12 locations across Toronto, Ottawa, and Montreal.
This Main Street outpost will mark their major leap across the country as their first-ever location in Western Canada.
Their philosophy is all about being your “breakfast buddy” that brings people together with bold flavours, regardless of dietary preferences.
But Eggstatic isn’t your basic bacon-and-eggs diner.
The menu leans heavily into Middle Eastern-influenced twists on morning classics, and notably, the menu is Halal, with plenty of vegetarian and vegan-friendly options.
According to the website menus, you can expect dishes like their signature Shakshuka (poached eggs in a rich tomato sauce with feta), Crispy Chicken Nashville Benedict, and the indulgent Lotus Biscoff Pancakes topped with cookie butter sauce and vanilla ice cream.
They also serve unique items like Falafel Croissants and Beef Croissants loaded with cheddar and garlic mayo.
While the brand hasn’t officially listed this Vancouver outpost on their website’s “Coming Soon” section yet, the physical evidence is undeniable.
We also spotted crews actively working inside the unit, suggesting that renovations are well underway to transform the dark ramen shop into a bright brunch destination.
Main Street is currently in a bit of a transition period.
Eggstatic arrives just as Jo’s Italian Deli expands in the area, but also follows the recent closure of the long-standing The French Table earlier this month.
