After 2 Years of Pop-Ups, Vancouver’s AeroPress Champion Couple Just Opened a Mount Pleasant Cafe

After two years of pop-ups and a shelf of AeroPress trophies between them, a Japanese husband-wife roasting team finally has a permanent address.

Hiyori Coffee soft opened in Mount Pleasant earlier this week, and fans of the duo are already finding their way over to East 6th.

If you follow Vancouver’s coffee scene, you likely already know Shinya and Eri.

He is a Canadian AeroPress champion, she has her own national and regional podium finishes, and their micro-lot roasting has built a following since they launched in 2024.

We stopped by in the afternoon, and the first thing that lands is the space.

It is big and mostly open, the old Enishi Space that ITSUMO used to run as an event venue next door.

The coffee counter sits on one side.

The rest is breathing room, with window bench seating along the glass, a long table lined with bags of Hiyori’s beans, and a corner shelf of brewers and gear for the home setup crowd.

The menu is the fun part.

There are around nine single origins on the board, each with its own flavour profile and wash, from a washed Ethiopia to a white honey Gesha.

You pick the coffee first, then choose how you want it made: espresso, flat white, latte, or AeroPress.

We went with #28, a natural Costa Rica that the staff flagged for its fruit-forward notes, listed as black cherry, passion fruit, and raspberry.

We tried it as a latte first.

Then we remembered who we were dealing with and ordered it again as an AeroPress.

The AeroPress was the move, and it was not close.

The milk in the latte rounded everything into something soft and easy, but the AeroPress stripped it back and let the berry and stone-fruit notes sit clean and bright on the tongue.

The difference was very evident.

If fruity is your thing, #28 is the one to get while it is still available.

There are a few small snacks too if you want something alongside the cup.

One thing to plan around: the AeroPress is a few dollars more and it takes a few minutes to brew, so order it when you actually have time to sit.

That is sort of the whole point here.

The room is calm and quiet, and waiting on the bench while your cup finishes is a genuine pause from whatever is going on outside.

For now, Hiyori is only open Monday to Friday, 8am to 3pm.
