Highly Rated Bakery Cafe To Open Second Location in Vancouver Soon

It looks like one of Vancouverโ€™s highly rated coffee shops is ready to expand!

Doe Coffee, the Hastings Sunrise favourite known for its warm atmosphere and in-house baked goods, is opening a brand-new location at the edge of Strathcona this September.

The shop will serve as both a central bakery and a retail cafรฉ, marking a big next step for the small but ambitious team.

Owner and CEO Bin Ni told Noms Magazine that this new project is about more than expansion.

โ€œDoe Coffee isnโ€™t about me anymore. I carry the responsibility of those who trust me, and I need to build this brand bigger so my team has the space to grow. That responsibility means I canโ€™t slow down โ€” if anything, it pushes me to work even harder.โ€

The new 600-sq.ft shop will be attached to a 5,000-sq.ft central bakery, a space meant to give Doe Coffee the ability to expand its pastry offerings and elevate the quality of its existing lineup.

Bin says, โ€œAt Doe Coffee, everything our customers taste is crafted by our own hands. From roasting our own coffee to baking croissants and loaves in-house, weโ€™ve built a vertically integrated business designed to deliver the highest level of quality and consistency. Nothing is outsourced โ€” we believe every detail matters.โ€

While the Hastings location was inherited as-is, the Strathcona shop has been designed from the ground up.

The space uses curved ceilings, natural wood tones, and soft finishes to create what Bin describes as โ€œwarm, modern, and welcoming.โ€

The intention is for the design to stay calm and functional, giving guests a timeless space to enjoy their coffee and conversations.

The menu will carry Doe Coffeeโ€™s signature non-tipping model and its popular Doe Pass membership program, which offers unlimited drinks for one monthly price along with discounts on beans, food, and merchandise.

For anyone wondering what to try first, Bin recommends the butter croissant paired with a flat white – a pairing that he says โ€œperfectly captures what we stand for โ€” craftsmanship, generosity, and care in every bite and sip.โ€

For those who may not know the backstory, Doe Coffee first opened during the pandemic under the name Penny Royal Cafe before rebranding in 2022.

Since then, it has quietly built a reputation in the city and among other cafes (several shops carry their pastries) with no advertising, relying purely on product quality and word of mouth.

The new Strathcona location is expected to open by mid-September 2025 in one of the newer developments along Clark Drive.

It will join the original Hastings Sunrise shop in bringing the Doe Coffee experience to more of Vancouverites.

This new Doe Coffee will be joining other upcoming new Vancouver food spots like Chun Fun How Kingsway, SYU Kitsilano, and Cha Tra Mue.
