That has been the ongoing tale in Vancouverโs food scene this year, with plenty of turnover shaping the cityโs dining landscape.
Earlier this month, longtime 24/7 Cambodian Vietnamese restaurant Pho Extreme Xu Lua quietly shut down after more than a decade of service.
Its familiar bright red sign has now been replaced with a black, modern look announcing a newcomer: Hu Tieu Mom Vietnamese Eatery, which soft opened on September 11.
The restaurant takes its name from hแปง tiแบฟu, a beloved Saigon noodle soup known for comfort and tradition.
At Hu Tieu Mom, the focus is on homestyle flavours, fresh ingredients, and a family-run warmth thatโs easy to notice.
Their signature House Special Hu Tieu Soup Noodle features a savory broth paired with silky rice noodles and a medley of toppings including sliced and minced pork, shrimp, squid rings, and pork heart, finished with crispy shallots and herbs.
Each bowl arrives with bean sprouts, lime, and chili on the side for diners to adjust to their taste.
The menu extends beyond soup with both wet and dry versions of hแปง tiแบฟu, rice plates, vermicelli bowls, and a selection of appetizers like spring rolls and chicken wings.
Fresh fruit drinks round out the offerings, making it a versatile stop for lunch, dinner, or late night meals.
While not open around the clock like its predecessor, Hu Tieu Mom keeps the lights on until 2AM, still a reliable option for night owls looking for a comforting bite after hours.
And for anyone wondering, recent reviewers note this is not a rebrand of Xu Lua but an entirely different team stepping into the space.
Hu Tieu Mom now joins the lineup of recently opened spots around the city, including Crab Hot Lau on Granville, Chun Fun How on Kingsway, and Nomo Nomo.
