They will be taking over the former Sciue Italian Bakery unit (1111 Melville building) on the corner of Melville and Thurlow.

Sciue shut down all their locations in the city back in May 2023 due to financial troubles.

Established in East Vancouver in late 2014, Pallet Coffee quickly became a name in the city for great coffee.

Born from a vision to make exceptional coffee accessible, Pallet prides itself on being community-minded and locally owned.

Now a multi-faceted establishment, Pallet offers not just award-winning coffee but also mouth-watering food through Palate Kitchen, known for its upscale and delicious brunch bites.

Pallet Coffee’s new location will be a busy one as it’s near numerous offices and the fancy new The Stack building – which will include the upcoming Nook restaurant.

It will be the brand’s 3rd downtown Vancouver outpost.

The opening date and finer details are still under wraps for now, but you’ll most likely can expect the same drink and food menu as other locations.
