Big news for Mexican food and agave lovers in Vancouver!
This August, the team behind one Michelin star Published on Main and award-winning Bar Susu is launching El Gato Gab Gab, a modern Mexican cocktail bar & botanero.
Located at the previous Novella Coffee location (2650 Main Street), this 3,200-sq. ft space will feature dynamic flavours and a dedicated agave spirits list, perfect for adventurous drinkers.
Boxset Collective, the team behind this new spot, wanted a place to celebrate agave and other spirits in a fun and creative way.
“We are big agave fans and wanted to open a spot where guests can experience an agave-forward program in a fun, creative, and exciting space,” Co-founder Cody Allmin shared.
El Gato Gab Gab will offer a vibrant mix of cocktails, agave spirits, and ice-cold cervezas.
Beverage director Joe Casson has crafted a menu inspired by Mexico’s diverse culinary landscape.
Expect drinks like the Pinoy to Piña, a tropical mezcal and rum highball with banana soda and ube ice cream.
Or try the ¿Que Pasa, Folks?, a warming reposado tequila fizz with pasilla chile, carrot, and marigold.
For margarita fans, the Gatorita is a refreshing twist on the classic.
In the kitchen, executive chef Christian Chaumont (previously Tultepec, Cuchillo, and Mexico City’s Máximo Bistro) will bring modern Mexican cuisine with a Pacific Northwest touch.
Dishes like Dungeness Crab Flautas Ahogadas and Sweetbread Tostadas are on the menu.

With aquamarine-teal and burnt orange walls painted by local artist Dominique St. Jean, the ambiance is both lively and cozy.
Handmade walnut tables add a touch of hacienda warmth, while contemporary upholstered and tiled elements tie the design together.
Guests can enjoy a relaxed atmosphere with options to sit in a quiet corner or be part of the buzz at the bar.
The grand opening date is still to be announced, but it’s expected to be soon in August.
