Vancouver’s Iconic SalaThai Reopens New Modern Thai Restaurant This Week

If you were mourning the loss of SalaThai—the city’s first Thai-owned and operated restaurant—this is your sign to get excited because the Kongsilp family is back.

Jay Nok Modern Thai is officially opening its doors on Thursday, February 27, bringing an exciting new chapter to Vancouver’s Thai food scene.

And they’re bringing a bold reinvention of Thai street food to Olympic Village.

Taking over the former Flying Pig unit, Jay Nok is all about celebrating the vibrant, flavour-packed dishes found in Thailand’s bustling street markets.

The menu brings together a mix of regional specialties, from smoky grilled meats to rich, aromatic curries, all designed to be shared.

Expect highlights like the Central Som Tom (a tangy papaya salad with chili lime and peanuts), Pad Kee Mao (spicy drunken noodles), and the show-stopping Chiang Mai Khao Soi (bone marrow curry noodle with tender spare ribs).

If you’re into next-level indulgence, the Pad Thai Chao Wang with jumbo prawns wrapped in an intricate egg nest should be on your must-try list.

At the helm of the kitchen is Executive Chef Bumpen “Nok” Khangrang, a talent whose culinary journey started in Thailand before she made waves at SalaThai.

She’s joined by award-winning Consulting Chef Clement Chan, known for his work at Torafuku and Archer Dining (which earned MICHELIN Recommended status in 2023).

With their combined expertise, expect dishes that blend traditional Thai flavours with modern techniques.

The 3,900-square-foot space, designed by Jute Studios, brings the energy of Bangkok’s street markets by day and transforms into a glowing social hub by night.
