Good news, sushi fans of Vancouver!
Tom Sushi, our pick of being one of the best sushi restaurants in Vancouver, is known for its top-tier sushi at budget-friendly prices, is expanding.
But hold onto your chopsticks – this isn’t just another branch of Tom Sushi. Instead, Chef Tom Jeon has something a bit different up his sleeve.
The new venture is called Tozen, and it’s set to debut on West Broadway in September.
“We decided to give the restaurant a new name because we’ll be offering a different style of food,” says Chef Jeon. “We want to preserve Tom Sushi’s unique style and let Tozen carve out its own path.”
Tozen’s mission is clear – to showcase a more extensive range of fresh fish from around the globe, with a special focus on Japan.
But that’s not the only difference between Tozen and its sibling establishment. “The entire concept at Tozen will be distinct from Tom Sushi,” Chef Jeon explains. “Apart from serving quality fish, every other aspect will be different from what you’ve experienced at Tom Sushi.”
Chef Jeon elaborated on how Tozen will have its own identity, starting from its aesthetics. “Tozen’s interior design will also diverge significantly from Tom Sushi’s,” he adds. “We’re going for a darker theme, more in line with modern 2023 decor. “
From our research, the interior design is being handled by Minah Space, who has previously worked on Saku, Mello, and more. She also was part of the redesign of the current Tom Sushi.
So why Broadway?
Despite the ongoing Broadway line expansion, when asked about the choice of location, Chef Jeon revealed, “I had a very specific vision for Tozen. We examined numerous areas and units. In the end, Broadway was the perfect match.”
Tozen will be replacing the Happy Wood BBQ unit on West Broadway.
Tozen is projected to open its doors sometime in September, so mark your calendars.
