Vancouver’s food scene is gearing up for a busy stretch, with new cafes, bakeries, and restaurants in the works across the city.
This roundup covers the openings we are watching, from international names making their local debut to homegrown favourites adding new addresses.
Most do not have firm dates yet, but signage is up and buildouts are underway, so here is what is coming.
1. Rosalia Osteria

From brothers Dom and Frank Morra, the team behind Via Tevere and Don’t Argue Pizza, this tiny pasta-focused osteria is named after their grandmother Rosalia.
Expect house-made pasta, shareable antipasti, salads, and Italian desserts in a 600-square-foot room seating
just 33.
The Yaletown opening is targeted for late summer.

2. Eggslut

The LA-born egg sandwich chain with a global cult following is coming to Vancouver. Founded by chef Alvin Cailan as a 2011 food truck, Eggslut is known for The Slut, a coddled egg over potato puree served in a jar with baguette for dipping.
A 2026 opening is planned and they’ll be landing on Alberni Street.

3. Mandy’s Gourmet Salads

The cult-favourite Montreal salad chain, founded in 2004 by sisters Mandy and Rebecca Wolfe, is opening two Vancouver spots.
Expect a chef-driven menu of creative salads, grain bowls, proteins, and house-made dressings in distinctly designed rooms.

4. Läderach Pacific Centre

The Swiss chocolatier is opening at CF Pacific Centre. Family-run since 1962 and operating in more than 20 countries, Läderach is known for FrischSchoggi, hand-broken slabs of fresh Swiss chocolate, plus truffles, pralines, and bars.
Signage confirms the downtown location, with a Fall 2026 opening expected.

5. Ramen Danbo Main

The Japanese ramen chain that regularly pulls a line out the door is opening on Main Street. Danbo specializes in Hakata-style tonkotsu ramen from Fukuoka, with customizable broth and noodles.
The new shop is under construction with signage up, and is slated to open in July.

6. Angus T Waterfront & Davie

The croissant-focused bakery, founded in 2018 and known for flavours like pistachio raspberry, black sesame, and earl grey, is adding two more locations in Downtown.
One lands downtown at 320 Granville Street and another in the West End on Davie Street. Summer 2026 is the target for both.

7. Bisou Bakehouse

The North Shore French bakery is bringing classic patisserie to Robson Street. Founded in 2006 by five friends in West Vancouver, Bisou turns out croissants, pain au chocolat, macarons, Danishes, cakes, and cafe pastries, and also supplies Fairmont hotels and international airlines.
The space is still under construction, with no date announced.

8. Linh Noodle Bar

From the Linh Cafe team, this noodle-forward spot brings Vietnamese cooking refined with precision to Vancouver House. Chef and owner Tai Nguyen blends French training with traditional Vietnamese flavours across a focused menu with food-paired cocktails.
The team says it is almost ready, though no official opening date is set.

9. Chaiiwala

The UK-born chain calling itself the King of Karak is opening along Granville Street and the West End.
Tracing its roots to a 1927 New Delhi tea stall, Chaiiwala serves spiced South Asian comfort food alongside Karak Chaii, Karak Coffee, and English Chaii, plus butter chicken rolls and masala chips.
No opening date is confirmed.

10. Doe Coffee

The no-tipping cafe known for its pastries and matcha is heading to Main Street. Owner Bin Ni’s team offers croissants in flavours like mango passion fruit and ube, plus signature matcha lattes and croissant sandwiches.
Signage is going up at the new spot, though no opening date has been set.

11. Honest to Pete Coffee Roasters

A Vancouver coffee roaster that started as Peter’s home-roasting hobby is opening a downtown shop. The small-batch roaster sells beans roasted fresh daily, led by its Retrosprusso blend with notes of milk chocolate, caramel, macadamia, and cherry.
The Hamilton Street space is under renovation, targeting sometime this summer.

12. Trees Coffee Joyce & Kilarney

The homegrown chain behind organic fair-trade coffee and New York-style cheesecakes is adding a Joyce-Kingsway location.They’re also taking over the previous Starbucks unit in Kilarney.
Founded in Vancouver in 1996, Trees runs around 15 locations across Metro Vancouver, often near transit.
Signage with a See You Soon graphic went up in April, though no firm date is set.

13. Meros House of Yogurt

A wellness-minded brand built around Greek yogurt bowls is opening in Yaletown. Meros focuses on functional nutrition with pre-built bowls of yogurt and fresh ingredients designed for everyday routines.
Signage is up and window wraps are in place on Hamilton Street, pointing to an imminent opening, with no date confirmed.
